Breakfast for Lunch....Omelet Muffins make it happen!

I love breakfast food. But I hate getting up early enough to make it. It’s a real problem. So anytime I have an excuse to rock Breakfast for lunch or dinner, I jump at the chance. It’s good anytime of the day. Today’s Breakfast Omelet Muffins are the perfect solution. You can eat them straight out of the oven or pack them for take along lunch and have healthy delicious food at work. Who could ask for more?

Ingredients
  1. 3 eggs
  2. 2-3 tbsp milk (I used 2 %)
  3. salt/pepper
  4. chopped onions
  5. chopped bell peppers
  6. chopped ham
  7. shredded mozzarella cheese
  8. (or basically any ingredients you like in your omelet)
  9. cooking spray
Instructions
  1. 1. Preheat your oven to 375F. Spray 4 of the 12 regular cup muffin tin with nonstick spray.
  2. 2. Mix all of your chopped ingredients and cheese into a bowl, and place into the bottom of the 4 muffin cups. Fill them about 1/2 of the way full.
  3. 3. Beat eggs with the milk and season to your liking. Pour egg mixture into each cup. Make sure not to overfill or it will leak out during the baking process.
  4. 4. Bake for about 15-20 minutes, or until muffins are brown around the edges. Cool before removing from omelets from muffin tin.
