Kids are obsessed with dipping things. There is just something supremely satisfying to a small child to plunge a piece of food into something mushy and then eat it. If I had to make an educated guess, it’s the messy factor. Kids love making a mess and yummy things make it way more fun. Lucky for you, this “Edamommy” dip is fun, tasty and healthy. Just make sure you wipe down the kid and table afterwards.

Ingredients
  1. 2/3 cup shelled edamame
  2. 1/2 ripe avocado
  3. 8 basil leaves
  4. 1 tablespoon olive oil
  5. 1/2 teaspoon lemon zest plus 1 tablespoon lemon juice
  6. kosher salt
  7. cut-up vegetables, for serving
Instructions
  1. Cook the edamame according to the package directions.
  2. Puree the edamame, avocado, basil, oil, lemon zest, lemon juice, ¼ cup water, and ½ teaspoon salt in a food processor until smooth, 30 seconds to 1 minute.
  3. Serve with crostini or vegetables.
Notes
  1. Store the dip in the refrigerator in an airtight container for up to 2 days.
