Jazz up morning Oatmeal with Apples & Pecans

Morning oatmeal is one of those meals where you are tempted to throw in the towel. You grab that little packet thing, throw in some hot water and bam…kids have a hot breakfast with no fuss. Even if you get the flavored ones, they just aren’t as good as homemade. So why not spend an extra ten mins in the kitchen and start the day out right with this delicious Oatmeal with Apples, Pecans, and Cinnamon. 

Oatmeal with Apples, Pecans and Cinnamon

Ingredients
  1. 2 tbsp. pecans
  2. kosher salt
  3. 1¼ c. old-fashioned rolled oats
  4. 1 red apple, such as McIntosh or Braeburn
  5. 2 tsp. brown sugar
  6. Pinch ground cinnamon
Instructions
  1. Heat oven to 400°F. Place the pecans on a rimmed baking sheet and roast until fragrant, 6 to 8 minutes; chop.
  2. Bring 2 1⁄2 cups of water to a boil in a medium saucepan. Add a pinch of salt and stir in the oats. Reduce heat and simmer, stirring occasionally, until the oats begin to thicken, 3 to 4 minutes.
  3. Add the apple and cook, stirring occasionally, until the apple is just tender and the oatmeal has thickened, 1 to 2 minutes more.
  4. Sprinkle with the pecans, brown sugar and cinnamon before serving.
