Let the kids help with dessert...No Bake Apple Pie Cheesecake Cups

As you are approaching the holidays, particularly one focused entirely on food, the kids can start to get annoying. Chances are they’ve popped into the kitchen so many times with questions/complaints/hungry/cousin so & so hit me….that you are ready to unleash Grandma and her dreaded wooden spoon. You know what I mean. 

Instead, put the older ones to work making this delicious, healthy, no bake desert. Make sure they are old enough to have good chopping skills otherwise you may want to prep a few parts for them and let them assemble the cups. No matter what, they will be occupied and out of your hair. Additional bonus, they don’t need oven space for these No Bake Apple Pie Cheesecake Cups, so there won’t be any fighting with the Turkey for oven space.

Apple Pie Filling
  1. 2 cups finely chopped peeled apple
  2. 1/2 cup water
  3. 1/4 cup granulated sugar
  4. 2 teaspoons ground cinnamon
  5. 1/2 teaspoon ground nutmeg
  6. 1/2 teaspoon ground clove
  7. 1 teaspoon cornstarch
  8. 1 teaspoon vanilla extract
Cheesecake Filling
  1. 1/2 cup heavy whipping cream, cold
  2. 8 ounces full-fat cream cheese, softened
  3. 1/2 cup granulated sugar
  4. 1 teaspoon vanilla extract
  5. 2 packages (15 count each) Athens Mini Fillo Shells
  1. First, make the apple pie filling: In a large saucepan, combine the apples, water, sugar, cinnamon, nutmeg, clove, and cornstarch. Bring to a boil, stirring often. Once boiling, cook for 3-5 minutes or until thickened and apples are softened. Remove from heat and stir in vanilla. Cool while making the cheesecake filling.
  2. For the cheesecake filling: In a large mixing bowl (with whisk attachment if using stand mixer), beat the heavy cream until it thickens and stiff peaks form, roughly 3-4 minutes (when you pull the beaters up, peaks will form and not fall over). Transfer to another bowl and keep cold in the refrigerator.
  3. In the same mixing bowl (no need to clean bowl - switch to paddle if using stand mixer), beat together the cream cheese and sugar until smooth and creamy, about 2-3 minutes. Beat in vanilla. Scrape down the bowl.
  4. Fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. Pipe the cheesecake filling into each fillo shell then top with apple pie filling. Chill for at least 1 hour before serving.
