Tuna Salad, a classic staple for delicious lunch!

Tuna Salad Sandwiches are one of those things that has been around since the dawn of time. At least it feels that way. Everyone seems to have a version of the recipe handed down from grandma, that only they know how to make. No one knows who invented it but there is a reason it’s been around so long. It’s darn good! We’re rocking a healthier, lighter take with todays recipe. Easy to throw together, with a little bit of crunch this one is sure to be a hit!

Ingredients
  1. 2 can chunk light tuna in water
  2. 2 medium stalks celery
  3. 1 medium carrot
  4. ½ medium red pepper
  5. ¼ c. light mayonnaise
  6. 3 tbsp. nonfat plain yogurt
  7. 1 tbsp. fresh lemon juice
  8. pepper
Instructions
  1. In medium bowl, combine tuna, celery, carrot, red pepper, mayonnaise, yogurt, lemon juice, and 1/4 teaspoon freshly ground black pepper. Makes about 2 1/2 cups.
